Mushroom Latte - Post-Holiday Immune Boost

The holidays are a fun time with loved ones and a much needed break for most. It's also possible that our immune system can weaken during this time due to over-indulging, emotions, and perhaps letting go of our normal self-care practices

I can say for myself that it's been an emotional time (with full moon in effect also) and my body has responded quickly and feels weaker. It's making me slow down and actually take a look at all that's arising and needs to be worked out. 

Health is so much more than just what we put into our body. Emotions, environment, and thoughts are just as important to our well-being. Although I have kept my holistic way of eating while I've been traveling and taking time off from work, I am needing to bump up my natural medicinal remedies (along with being still and looking inward) to keep my immune system strong. 

My go-to the past few days has been this super creamy and delicious mushroom latte (because you all know I love mushrooms and chocolate!), which the whole family loved too.

This morning, I partially enjoyed this latte outside while it was snowing! Sadly, it didn't stick, but it was beautiful to watch. 

Ingredients

2 cups hot spring water or tea

1 teaspoon Mushroom Immunity blend (find here)

1 Tablespoon raw cacao powder

1/2 teaspoon mucuna pruriens powder

1 Tablespoon raw honey

1 Tablespoon ghee or coconut oil

Pinch of sea salt

Procedure

  1. Blend all ingredients together until creamy and frothy.

Guilt-Free Holiday Thumbprint Cookies

'Tis the season for all the indulgent (and healthy) things! 

Yes, this time of year we are presented with treats everywhere we go, but I like to always find a way to bring in some nourishment into the mix. For me, it starts with completely erasing the story of healthy needing to be boring and indulgent needing to be 'bad for you.'

The quality of ingredients is key when making anything healthy yet still indulgent. When we use organic and unrefined ingredients, our body actually knows how to process them and there is no inflammation or sluggishness involved. You truly can have your cake and eat it too. 

I've been making these cookies for the past month for clients, friends, and events. They're a hit and super easy to make. Give them a try at your holiday gatherings coming up. 

Ingredients

Oat cookie base:

2 cups oat flour (blend gluten-free oats to make flour)

¼ cup coconut flour

½ teaspoon baking soda

⅓ cup coconut palm sugar

⅛ teaspoon sea salt

1 teaspoon vanilla

1 organic egg

⅓ cup melted coconut oil

2-3 Tablespoons water or almond milk, as needed

 

Fruit Jam Filling:

1 pound fresh cranberries (or fruit of choice)

3 Tablespoons pure maple syrup

Juice of 1 lemon

 

Melted organic dark chocolate to drizzle over baked cookies. Get some superfood chocolate here or make your own

Procedure

  1. Preheat oven to 350 F.

  2. To make cookie base: In a small bowl, mix flours, baking soda, coconut sugar, and sea salt. Set aside. In a large bowl, whisk together coconut oil, egg water or almond milk, and vanilla. Add dry mixture to wet mixture and whisk to combine well. Add enough liquid until dough comes together. Roll dough into 1-inch balls and flatten out slightly on a parchment-lined baking sheet. Use finger to make a dent in the middle of the cookie.

  3. To make jam: Place cranberries in a medium saucepan along with maple syrup and lemon juice. Let simmer, stirring occasionally, until cranberries start popping and become soft like a puree. Taste and adjust flavor to your liking.

  4. Add fruit jam to center of cookies. Bake for 10-12 minutes, until bottom of cookies is lightly browned.

  5. Melt chocolate in a double boiler. Place cookies on a parchment lined flat surface such as a cutting board or baking sheet. Drizzle with melted chocolate as much as you want. Place in refrigerator for a few minutes, until chocolate is firm. Remove from fridge and enjoy. Note: If you want to eat them while still warm, skip putting them in the fridge and enjoy with the chocolate melted over cookies. 

Makes ~20 cookies

There’s no such thing as getting your hands dirty when it comes to chocolate. But if there were, I guess you could say that’s how we spent our Valentine’s Day. At the Chocolate Making Workshop we made rose and fig truffles, chai spiced chocolate mousse, and dark chocolate bark. Everyone got to build their own dark chocolate bark with nuts, seeds, fruit, and superfood powders. There was a lot of love in the air (and in the chocolate) on Saturday! We’re grateful for everyone’s great energy and company.

Superfood Hot Chocolate

Every year I come home to visit for the holidays with a new favorite drink or food that I'm eager to share with my family. This year, I've been on a hot chocolate kick for about a month now, and it's been a healing and delicious journey. This has been the morning drink of choice at my house for the past few days, and I encourage you to give it a try if you're looking for a cozy nourishing start to your day. Especially around the stressful holiday season, starting with a warm pre-digested drink like this will sooth the digestive system instead of causing more stress first thing in the morning. You'll feel lighter and more energized.

Ingredients

2 cups herbal tea -Any herbal tea of choice works.I use a loose leaf mixture of dandelion root, holy basil, gynostemma, and chaga mushroom. (I order my herbs online from Mountain Rose Herbs)

2 Tablespoons hemp seeds

1 Tablespoon raw cacao powder

1 Tablespoon coconut oil

1 teaspoon raw honey

1 teaspoon raw maca powder - Boosts energy, balances mood, influences stamina, and aids sexual function

1/4-1/2 teaspoon ashwagandha powder - An adaptogenic herb that helps the body deal with stress, strengthens the immune system, and boosts energy. 

1/4 teaspoon he shou wu - Strengthens the immune system, supports adrenals, calms the nervous system, and maintains youthful condition and color of hair. 

1/4 teaspoon vanilla

1-2 drops of vanilla stevia (Omica Organics)

Pinch of sea salt

Pinch of cayenne pepper

Procedure

  1. Place hot tea and remaining ingredients in a blender and blend until creamy and frothy.

Note: This drink is not by all means limited to these ingredients only. My hot chocolate is never the same. I like to switch off using different superfoods depending on how I feel that day. Play around with what calls you. Other ingredients I often use: mucuna, shilajit, lucuma, stevia, dates instead of honey, tahini, cinnamon, medicinal mushroom powders (reishi, cordyceps, turkey tail, shiitake, etc.), and Everlasting Vitality & Youth.

Homemade Holiday Gift Ideas

As we all know, the holidays can be a stressful time with traveling, cooking, gifts, and trying to remain calm through it all. I used to stress about buying gifts for my family and friends, until I realized that gifts don't need to be something expensive or even material. In my opinion, the best gifts are usually good company and sweet memories. That said, of course I still get the urge to gift my loved ones something, but it's different now. Now I gift things that I make myself because I know they will enjoy especially because they're made with love.

I wanted to share with you some of my favorite gifts that I've made in the past that will still make your loved ones smile, but won't leave your wallet hurting. Plus, you'll be giving them something nourishing that will support their health.

  • Dark Chocolate Bark - Find my recipe for 5-minute homemade chocolate here. To make into bark, pour mixture onto a flat dish lined with parchment paper and then add any toppings of choice to make it festive. Refrigerate until firm and then break into pieces. Recommended toppings: chopped nuts or seeds, coconut flakes, cinnamon, cacao nibs, goji berries.
  • Lavender-scented Coconut Oil Moisturizer (or flavor of choice)

Ingredients:

1 cup melted coconut oil

Handful dried or fresh lavender flowers

A few drops of lemon essential oil (optional)

Procedure: Mix lavender flowers into coconut oil and let sit for 20-30 minutes. Drain lavender and mix in a few drops of lemon essential oil if desired. Place in a glass jar with lid and let sit on counter until solid. Use as you would any lotion. If too solid when ready to use, grab a spoonful and let it melt in your hand for a few seconds before applying it.

  • Creamy Sunflower Seed Butter - recipe here.
  • Prepare a DIY gift for someone with all the ingredients they need - I did this last year and it was a hit. Simply choose a fun recipe and get all the ingredients together in a container along with the recipe for your loved ones to make themselves. Fun examples are chai (picture below), granola, baked goods, or homemade beauty products.

  • Coupon book! -  This one seems silly, but it can be the most fun. Make a coupon book for someone you love with coupons for special gifts they like such as a massage, a picnic, their favorite food/dessert, and day trip somewhere, a movie, or anything else your heart desires to give.
